Maybe because the Zahn books revolves around the OT cast? But sure you could just replace them with a new original one. Maybe you could bring in a young Luke, or OT cast all CGI'd out.

Or you could make the whole trilogy being a purely New Republic military movie with no cameos from the OT. No Jedi, no crazy Jedi, no Emperor's Hand, no Force powers, no lightsabers.

Personally I would love to see a collection of force users that are nither jedi nor Sith.

They can't follow it too exactly, Rukh is already dead and Mandalorians didn't exist as a concept when the trilogy was written.
