Because it's a movie made in heavy part with the involvement of a Jewish guy who wanted go into things through the lens of pulp.
And no, this isn't me dredging up current issues, this is handled in Roger Ebert's reviews of the films and why he was happy Crusade went back to Nazi's, since his impression was the entire series soul is sticking it to them.
The opening: One has to realize that 5 years went by between Temple of Doom and Last Crusade. The opening is to bring everyone on a quick nostalgia trip to refresh them before continuing one. They did much the same, only improved in places with Crystal Skull by setting it at the warehouse where we know the Ark was stored (Even if that failed given how old and grumpy Ford is).

I don't know you beyond what you post here, but it's clear what your anger and bitterness over life is doing to you, man. That is a key part of forgiveness, especially for those beyond your ability to forgive. You put the poison down you sit there drinking thinking shit over and move on even if those you forgive are not worthy of it.
So many foes you want to fight and strike down, but not the ones you need to confront: Deal with your family issues you've expressed here and the impact they've had on you.
I'm willing to bet like so many other things, any issues you have over the concept of God have more to do with your father and his actions than anything else.

I really wish I knew why the modern obsession with "Remember This?!" referential nostalgia is so popular, despite it being deeply grating and destructive towards suspension of disbelief. And I say this as a big fan of those things that get referenced. It's like someone shoving your favorite food on a plate right under your face and relentlessly insisting you eat it.
