That's a pretty interesting question and one I've asked myself. Since I don't think there are any gangsters on this forum I don't think any of us can properly answer your question.

It's a known fact that many gangsters love gangster movies. In The Sopranos, the characters are constantly quoting or referencing films like The Godfather or Goodfellas, and that's because actual mobsters talked about the movies a lot both in interviews and in private conversations that were either recollected or actually recorded by police bugging.

People like to see themselves onscreen, in other words.

Besides that, I imagine it's mostly an individual taste thing much like everyone else.

Also, how violent gangsters are kind of depends on what gang they are in, so they aren't necessarily surrounded by violence all the time.

A lot of people in hard rap took a liking to Scarface. I heard that it got an awakening from a lot of rappers having posters of it on like Cribs or something. But it makes sense. Scarface wasn't so much about organized crime, but just being a drug kingpin, which was recognized among hardcore rap genres.

Famously, agents of the FBI claimed that the Godfather films created gangster culture as we know it. They stated that previously to the Copolla movies, the mobsters they monitored barely spoke two sentences about things other than money, sex, or (occasionally) baseball. Crime was a job and not a lifestyle.

After the movies came out (which were based on the Borgias rather than actual mobsters), mobsters talked about honor, respect, loyalty, and tradition and other concepts that never previously mattered. Indeed, they've stated that this is an evolving process and mobsters often try to look like their TV version rather than the reverse.
