It's hard. If I want more Star Trek, I don't want you to reheat some thirty-year-old leftovers and try to convince me it's still edible. On the other hand, I don't want some completely new unrelated thing that has absolutely no resemblance that you decide to slap the name onto and then quickly go grab some random items from a Trekkie's collection and dump them on top and tell me that automatically makes it Star Trek, either.
The older shows were far from perfect. There's a lot that needed improvement and the subtext didn't always support the text. Still, I want to think we can get new stories and try new things without completely giving up on the parts that worked. I'm nostalgic for the old stuff, but I don't need to see it repeated... if I want to watch Khan, I can watch WoK, or Nemesis, or 2009, or Into Darkness...
Anyway, Khan's just not that interesting anymore.

That's a good question, and a bit harder to answer in a way that isn't just "these are the parts I like" without going into a long deep dive I don't have the time to write at the moment. As a substitute, I generally agree with Chuck's expressed opinions on what has worked and what hasn't for the show and movies. The difficult part is that if you asked a hundred people what works about Star Trek, you'd get nearly as many answers. The parts that overlap are most likely going to be the trivial (and non-essential) aspects. If I'm being generous, I think that could explain things like the JJ Abrams films.
