Really, Sokka's issue is far less than Katara.
Katara is a firecracker and the most headstrong and potentially potent of them all.
Basically Princess Leia.
This version is closer to Padme.

But yeah, Katara really has gotten the short end of the stick in both adaptations. At least with the film it was just how Shyamalan directed people, but in the show it felt like they just wanted to cater to those who took issue with her flaws ignoring that those flaws helped make her an engaging character.
It's kinda like what happened to Usagi in Sailor Moon Crystal, by removing the flaws of the character they made her less engaging and just made her a piece of wood.
It's honestly a problem with the show as a whole they remove the flaws of most of the cast to try to "Improve" them which only makes them less engaging and highlighting why characters need flaws. The only times a character has been perfect while remaining engaging, and NOT a parody of a Mary Sue, is with Mary Poppins and Baron Humbert von Gikkingen, both of whom have no real flaws but are SO Much fun to watch and in the formes case they DID tone down her flaws and made an iconic character in the process.
