Is Last Jedi Luke's actions consistent with Luke's character from the original movies?

I would say no. He felt his nephew was "very slightly" influenced by the darkness, so he attempted to murder him in his sleep. That's some genuine Sith-level treachery there. Contrast that to Legends Luke, who preached nothing but forgiveness and trying to reform your enemy. That's more consistent with the original trilogy. He saw good in his own father, who was "completely" claimed by the darkness, so no, I don't buy it. Some think this conforms to Luke's more emotionally wishy-washy characteristics, but it's like... did you people forget Return of the Jedi? Luke rejected the darkness (that would include murdering your own nephew as he slept), and he was far more mature and wise than how he had started out in A New Hope, as a whiny brat.
No, Last Jedi Luke just wasn't true to Luke's character. At all. He was the redeemer. The new hope. The future foundation of a new Jedi Order. And... it just wasn't consistent. At all.

My first impression after seeing the movie was that it was considerably humblized take on the character that I could see having had precedence.

His training was very unorthodox. He was the oldest padawan by 10+ years. Instead of training in conflicts for years like the jedi and its council, he took a more buddhist approach to training with jedi spirits while participating in ongoing skirmishes as a Rebel fighter.

If you want to characterise "beyond what I ever imagined [...] destruction, pain, death, and the end of everything I love" as "very slightly", then yeah, but that's what happens when you start with the answer you want and work backwards...

You mean the movie where Luke briefly gives in to the darkness and proceeds to lose his shit for a good minute after Vader threatened to take Leia?

Also, he didn't attempt to kill his nephew, he
considered it and it sickened him.

That was Vader in a nutshell. Rather than sitting down and talking to him about it, he just opted for the whole murder route. If he could see good in someone like Vader, who let's be clear, was fine with acts of genocide, murder, torture, etc... then he shouldn't have panicked when seeing it in his nephew. There's also the fact I feel as if Luke would have tried to study why the Old Republic fell and worked hard to avoid it. There is a lot of parallels between this and Vader, and that would have made him extra cautious when dealing with this situation, but because the prequels are awful, we won't mention them, and shoehorn Luke's actions into the plot to make him create another Vader clone.
OH NO YOU DON'T! Luke passed the test! He outright confirmed to the Emperor that he'd failed. He rejected the darkness and pulled himself back from the brink. If he won't murder his father when he's threatening his sister, then he sure as hell won't do it for the lame reasons he was given in Last Jedi.

They wrote the original characters are supporting actors. Probably could have done it better maybe, but that's the main thing that gets to me. It's a different saga with them stirring it up a bit. That's what Hamill said last I heard.
I don't think it's irrational in concept.
