The Borg.
The Ori big weapon is just one big powerful beam weapon that even none enhanced Tauri ships can withstand two hits from. They have smaller weapons that seem to very comparable to Gould ship staff weapons.
Borg have more ships. Ori had like less than a dozen ships.
Ori the ascended beings? Yeah they can mess up the Borg. The Priors can probably do alot of damage too.

Yeah, but the Priors have help from Ascended beings. Sure, we know weapons like the Sangraal can neutralize Ascended beings, but that was built by Merlin with his Ascended knowledge. It's not like something with the Prophets where chronitons can kill them. Even if they Borg can adapt, with the Ori at the back, they'll come back, stronger than ever, just you wait.

Priors didn't have help from the Ori when they were in the Milky Way. They relied on the abilities and knowledge they were given to them.
Now, if you are talking about the Ori are there along side their converts and Priors versus Trek then that may an issue.
There is nothing to suggest though the Ascended beings of Trek wouldn't involved against the Ori either. Whether it's the Organians, Metrons, or Q to name a few.
The Q would pimp slap the Ori a new one.

Well, in this scenario, the Priors could have Adria with them. I just don't see Ascended technology as something the Borg could adapt to. It's like claiming they could adapt to technology given to the heroes from the realm of the Prophets.

Really look at those episodes and tell me what exactly is 'ascended tech'. Priors only the ones who can pilot them? Sure. Those staffs though are not giving off some magical properties though. Remember Priors are basically humans pushed to the stable edge of human ascension. Their staffs give them more power than your run of the mill pre-ascended.
But the rest of the ship? No. Regular humans who are in what we think of the medieval period is helping run the ship. Sure Priors may actually pilot the ship and fire the weapons. But what if the ship is damaged? Who repairs it? The Priors? We don't know that.
Ori more than likely used their own advanced technology which probably would be equivalent to Ancient tech whether Lanteans or Asurans to make these ships.
Again, the Borg may have difficulties with the main weapon of the Ori ships as they have been shown despite their ability to adapt, they can be overwhelmed by sheer power. But doesn't mean the Borg can figure out the rest of the tech if they came on board.

I always took the center light in the Ori privy toilet rings -
- to be Ascended power. Is there a tech manual anywhere that says otherwise? Why else would the control chair ONLY be triggered by a Prior's DNA touch and thought processes?

The same reason why someone who needs the Ancient gene can run the Ancient chair. Same concept.

No tech manual. There is nothing to suggest it's not just a very large powerful weapon. Look at it, it's emitter is pretty damned big.
The space weapon found in Atlantis in the first weapon looks to be comparable.
