Does anyone know what Disney/Marvel's plans are for the X-men? I've heard they are going to spin them off into their own setting, kinda like the Transformers comics, but I have not been able to confirm that.

Well, given the possible appearance of Patrick Stewart's Professor X in Doctor Strange and the Multiverse of Madness and Evan Peters in WandaVision as a "Recast" Pietro Maximoff and Spider-Man: No Way Home establishing that the other Marvel film's are "Canon" via Multiverse I think the X-Men from Fox will be included in the MCU via DSATMM hijinks. I wish Marvel luck given the messed up continuity of that series.

My gut tells me, given how much of a commercial bomb the last two X-Men films have been, the '''First Class'' X-Men are dead. The one possible exception being Fox/Quicksilver who completely outshone the pathetic MCU/Quicksilver in every single way.
The one man guaranteed a place in the MCU? Hugh Jackman. He is easily one of the top 10 most popular superhero actors of all time. His name alone will sell tickets.

Jackman retired from the role of Wolverine in Logan, that film was meant as his finally for his time in the role. The only guaranteed one in the MCU as confirmed by Kevin Feige himself is Deadpool and keep in mind the Amazing Spider-Man film's were considered to be dead after TASM2 and that series was brought into the MCU in No Way Home.

I thought Evan Peters appearance in
WandaVision was more like fan service than an actual continuity. Like how
Gargoyles will reference Disney films or how some of the Mecha from
Mobile Suit Gundam appear in the background in
The Transformers: The Movie.

Then again I heard a theory that wanda vision wasn't suppose to come out first, so it possible they wanted to introduce pietro after they introduce the idea of the mutliverse

Yes and we are also uncertain as to a processor X cameo.
Daredevil S3 showed the precept to the Weapon X program, but the show was almost cancelled after that happened.

I think it's going to be a slow process. A legacy character here and there and new actors are brought in for cameos. That is of course if they do it smart. Probably all started with the multiverse.
I think people are tired of X-Men and it's confusing as hell timeline. A MCU X-Men will benefit from being part of the MCU.

It will be a new Wolverine this time around. And might be more comic accurate than Jackman. Remember Hugh Jackman is over six feet tall and the comic book Wolverine is like a few inches taller than 5 foot.
MCU I am willing to bet will bring in mutants before X-Men. Perhaps adamantium as well. They haven't introduced that metal yet, just vibranium.
