Given that square has confirmed that the FF7 Remake series is going to be a Trilogy with rebirth being the middle chapter of said trilogy where is FF7R2 going to end? When you get down to it there's really only 2 points the story can end, the first of being, and the Spoiler Warning at the start was put there for a reason so stop reading now if you don't want to know any major plot points from the original game or how this game will end, Aerith's Death or the Black Materia.
Now, me personally I think of the two the Black Materia is the more likely scenario as while everyone knows how this story is going to play out it would still be an effective cliffhanger. In this Cloud has given into despair, answering the question that has been hinted at since the start of the series and now Sephiroth has what he needs to begin the end of the world and the rest of the party is captured by Shinra.
On the flip side, Aerith's death is just as powerful as one of the character we've been fallowing since the start of the series is killed just as she seems to have found a way to save the world and the game instead ends on her funeral.
Really, either option is a good way to end the story as it gives the story a strong moment to end on that leaves everyone wanting more and ends the game on a dark note. Even though we know how this is all going to end (according to the developers they're staying true to the original story and won't be making any serious changes) these are still powerful moments to end the game on that leaves fans and new comers wanting more.
