I agree that its certainly 1980s sexism that prevented Saavik from taking the knife, just as 1960s sexism prevented the women from punching (true story, go back and watch TOS, the women do nothing but kick and slap - which must rate as some of the strangest sexism that I have ever seen). I suppose one plausible in-universe idea could be that Saavik - whilst the most military of anyone present - is also meant to be quite young. Maybe the emotional part of her brain was more present than we see.
Its also worth noting that whilst male Vulcans have been consistent in their super strength relative to humans, female Vulcans do not seem to be all that much stronger than human women let alone human men. I always thought this during the ENT episode where T'Pol has to nut kick an Orion to get away from him. Shouldn't she be able to break his grip effortlessly given how we have seen that Spock can flatten a monitor with his bare hands? David the civilian might have been the strongest one there.

Speaking of Saavik and T'Pol I also think its worth mentioning that this film really does take some retconning to explain away the presence of female Pon Farr in ENT.
''Its called the Pon Farr. Vulcan males must endure it every seventh year of their adult life"
This line is really weirdly phrased coming from a Vulcan woman if we assume that she also experiences the Pon Farr. Wouldn't she just say ''Vulcans'' instead of ''Vulcan males''?
Lets change the wording here slightly:
''Its called the menstrual cycle. Human females must endure it every month of their adult life.''
Now if, for the sake of this hypothetical scenario, you later found out that human men also menstruate, wouldn't you find the previous sentence to be massively inaccurate? And yeah, i know, female Pon Farr is there just to get Jolene Blalock in her skimpies. But its a massive hole nonetheless.

2) Saavik said this specific line for some reason. Maybe Vulcan women are on another schedule. Maybe she was ashamed about it and didn't mention women for that reason.
3) Mentally correct the weirdly particular line.
