I do think that manga really improved story and characters compared to anime which is why I also tend to like it more. But then again manga is also lot cheaper to make than anime so there is no budget issues. And yes, I own entire NGE manga in omnibus form.

I blame the story issues on Hideaki Anno's well known struggles with Mental Illness. The way he self destructs the story on various projects, most notoriously Evangelion, is projected and embodied in Shinji. Sadly, as the Hero of the story, we root for him to overcome is problems which never happens because Anno doesn't overcome them.
Which is why the Manga is an improvement. It still has the crippling depression and nihilism but also shows it can be overcome and is much more hopeful.
But truthfully, I love Shinji Ikari Raising Project which ditches the angst for harem manga antics and gag comedy skits. It's borderline therapeutic to see these characters well adjusted and goofing around after Eva's nihilism.

Eva is a show that scares people away from anime. Fans need to stop recommending it to newbies.

As far as good entry anime goes I would say that to any westerner Cowboy Bebop and Dragonball Z (I might not like it but I can't deny that it's safe one) are safest bet besides of Ghibli movies. I don't know what kind anime fan recommends NGE or Rebuild movies to beginners but those are not entry level anime.

I think its the same reflex as why so many people recommend the video game Shadows of the Colossus: they want an example to point to that proves that anime can be Art. Never mind that most viewers won't give a crap about that, nor the fact that unlike Shadows, those who do will have an easy time poking holes in its artistic merits; and that there are much better examples you can always point to if they really do care about that. I can understand the reflex, since after all most anime has (or has had) a reputation for being childish, if in a different way than western animation. People think of anime and the first things that come to mind are Naruto and, indeed, DBZ. Shows which really were written for kids (or at least teenagers). If you want to prove that anime can be more than the medium's reputation in the west, Ghibli movies won't work simply because they have a reputation for being the Japanese equivalent to Disney: movies meant for the whole family, but not necessarily movies for adults. Show them Evangelion, and at least they get the point that its definitely not for kids. But I don't think most of them will be impressed, either, because of how confusing it is. I second Cowboy Beebop as a better alternative; its philosophical, its mature, its funny, and when it wants to be artistic its damn artistic. Madoka would be another possibility, given that Chuck was able to get it without having any previous knowledge of other Mahou Shojou anime like Sailor Moon, Precure, or Nanoha. But thanks to shows like One punch Man, I think the time has passed where people need to be recommended a super "artistic" show in order to find them a suitable introduction to anime. You just need to know what their personal tastes are, and with anime being far easier to get access to, you can probably find them something they will like.
