Well, we have thread about tv shows and movies we want him to review so why not one for books?
His Foundation reviews were the main reason i got into Asimov in the first place and since then there are some others i would love to hear his take on.
Heinlein's Starship Troopers
Asimov's Bailey Series
Arthur C. Clarke's Rendezvous with Rama
Kim Stanley Robinson's Mars Trilogy.
So what about books do you think he should do?

Book of the New Sun, he could do long videos on that. Maybe the Barsoom trilogy, but its probably more interesting because of its influence rather than the actual story.

How about A Song of Ice and Fire - plenty of time to research, procrastinate and fit in the regular reviews before Martin finishes writing them ;p

A Canticle for Leibowitz by Walter M. Miller is a classic and a personal favorite, I'd love for him to do a book review of it.

I'm pretty sure he hasn't done Prelude to or Forward the Foundation yet, so I'd want those done first, but I may be forgetting.

The Bob-iverse trilogy from audible. It is about a man who becomes a space probe.

I just finished the Brother Francis section on my audible copy.
It's alright.

Protector, by Larry Niven. It has some really nice world-building, and nicely illustrates the difference between having intelligence and having intelligent goals.

That was a very interesting read to have read at 42 I have to say without getting into spoilers.

In the running for my favorite sci-fi novel. I'd love to see Chuck review is as well, although some of its subtleties might be hard to bring into a relatively short review/summary.
Something like The Forever War or Ender's Game would be fun. Both easy to read, imaginative, and both have a lot of ideas to digest.

Jonathan Strange and Mr. Norrel would be nice, though probably impractical with Chuck's book-video format as the themes are buried very deep in the "narrative" part of the story.
