I was thinking about instead of leather you have something closer to Jedi robes but keep the breathing stuff like the mask and buttons.

Actually thinking about you could argue that Star Wars has already done the Alternate Timeline thing thanks to the Original Extended Universe. When Disney bought the series they rebooted the franchise to make it so the OEU (with the exception of the Clone Wars) never happened but it did happen, for about 20 years.

While Star Wars has never done an in-universe reboot like DC has... many Many... there is a stories of Star Wars where things played out differently. Where the Empire rose to power with the aid of one of their greatest Admirals, where Han and Leia had 3 children and one of them remained on the light side. Where Luke met the love of his life and had a child with her. Where Chewie died but the others lived and when peace was achieved without the aid of Palpatine's granddaughter.

Off topic I know, but it's an interesting thought.

You could argue that, but you'd have a very hard time making a convincing argument that this is what happened. That right there is called headcanon. I understand the impulse, but committing to that path will only lead to madness.

You'd be better off arguing that SNW, Discovery, and Picard are an alternate timeline. At least there's in-universe precedent and supporting narrative evidence (in addition to out-of-universe reasons). It's still a mess either way.
