Because games have scores and soundtracks, and that guy is considered a master of that instrument in Japan, which is probably why a Japanese company hired him to play music from one of the games they make/distribute.

I've heard a lot of people were upset about no Animal Crossing. How do ya'll feel on that subject?

I personally don't care for games like Animal Crossing, I mean if that's someone's idea of winding down or spending free time that's fine, I can sympathise with that, but I prefer games that offer me a memorable, interesting story experience or challenging puzzles and exercises. For the record I don't like most MMORPG's or 'action grinders' like Diablo or Destiny either.

I don't see why a new one shouldn't be made given the popularity of the series in the past, but is there truly high demand for a new one?

in general I'd agree with this, but with caveat. One of the things that frustrate me with Stardew Valley (I've never played Animal Crossing but I'm told it's the same way) is that it tries to do both. I could just relax doing the farming stuff, but they keep interrupting me with the forced socialization and town events, elements I'd welcome in an adventure or an RPG, but in a farming game it just gets in the way of what I want to be doing. Minecraft annoyed me when it started adding the survival elements for the same reason. It's a bizarre hybrid that doesn't do justice to any of the subgenres it implements, and they don't mesh together in a way that is greater than the sum of the parts for me either.
