Word of God is, that the caste-membership can switch freely at an individual's calling. Of course the caste-leaders have to agree with your choice, so there's that caveat. Anything else, especially anything more rigid, wouldn't really make much sense, given that the system comes from a military-minded Jesuit named Valen.
Inter-caste marriages are allowed, but seldom, thanks to people naturally marrying into their own society (incidentally that also leads to the different crest-styles displayed, for obvious reasons). Children are automatically assigned the caste of their parents until the child decides to switch caste, though it is unclear which caste a mixed-parentage child is assigned to. I suppose, since the Minbari don't appear either patriarchically or matriarchically organized, that the parents decide.

Based on her comment, I always got the impression that caste was determined by where their mother was from. You don't need "Word of God" for this - it actually happens in the show itself - and there is no requirement for caste-leaders to agree, at least not of the caste being left behind. In the episode (spoilers ahead, highlight to read) Moments of Transition, Neroon declares himself to be religious caste a few seconds before the starfire wheel kills him, so as to give Delenn control over the Minbari.

One thing I forgot to note first time around, Sinclair is an absolute beast when it comes to hand to hand fighting. He seems to get the better of Neroon despite the Minbari having like two or three times normal human strength. He might be great at learning the rules and finding the loopholes, but when it comes time to fight with his fists then he doesn't hesitate at all, he is fierce.

In case you missed it, but Sinclair is a forefather of the Minbari. Also, strength is not everything in an unarmed fight. The right technique is going to get you a far way against even a nominally superior fighter.

I just passed through the "Meet John Sheridan" review and HOLY SHIT, Sinclair has a Minbari soul? No wonder they didn't wanna kill him, with their "No Minbari has ever harmed another" edict.
