Love the use of "Ma-Rey Sue." Though I'm curious if these people would apply Mary Sue to where it belongs when it's a male character? Because I've seen some male Mary Sues.

I've seen plenty of people bring up Wesley Crusher as an obvious example of that. As it relates to Star Wars, I can't remember who exactly, but someone made a pretty good argument that Anakin was a Stu.

I don't see how anyone could argue that Anakin is a Sue.
He might be a bit Sue-ish in TPM, but even that ignores that the other characters did a fair amount of heroic work themselves and I never got the sense that Anakin was the key to everything or anything like that, and we are told time and again that he has a flaw of being deeply afraid and that turns out to be a very, very meaningful flaw in the long run.
Anakin in Episode II and III butchers men, women and children out of blind rage, denial and paranoia, is deeply neurotic, constantly complains, and enjoys a naive personal friendship with a manipulative psychopath bent on corrupting him. He's a total deconstruction of the Chosen One archetype whereby simply being that gets to his head and amplifies his personal failings and the destructive properties therein.
I'd say he's a Jerk Sue, but he's not quite that either since that's a real character archetype and usually describes someone who is an overpowered jerk whose existence is a plot tumour, and I don't think Anakin ever quite reached that there are other characters in those films who get a decent amount of screentime and plot relevance, plus Anakin get's defeated by Obi-Wan pretty savagely.

Also, a Sue tends to be, sometimes, an author insert character. I don't think anyone could see themselves in Anakin, and more than that, I don't think George Lucas sees himself that way.

I don't think he's a Sue in TPM- he arrives quite late in the story, is rejected by the Jedi for ominously prophetic reasons, and while he saves the day by blowing up the Droid ship i's through recklessness as much as skill, and it would have been for enough had Padme or the Jedi failed on their end. The Jedi throughout the film also insist that he's dangerous and Yoda at least does not change his mind even by the end- it's not very Sue-ish to establish your Sue as a threat unless you were planning to subvert it in some way, and Anakin definitely did not subvert that.
