All because of the original footage of how Harrison Ford walked Jabba who at the time was a human actor. You're right, Jabba seems completely out of scale. Star Wars was often 'about' suspense and surprise. Many of those moments were ruined in the re-releases.

The original Star Wars is full of unexpected moments and sections of slowly-increasing suspense. Starting with the long scene of the Star Destroyer panning (parodied in Space Balls) to Darth Vader being blasted out of the pursuit by a returning Han Solo.
